Green Tomato Chutney



Ingredients:

Green Tomatoes: 4-5
Garlic Cloves: 3-4
Salt: as per taste
Green Chillies: 3-4
Coriander Leaves: few
Oil: 1 tsp
Mustard seeds: ½ tsp
Cumin seeds: ½ tsp
Red Chillies: 1-2
Curry Leaves: 3

Method:

In the mixer, grind green tomatoes, garlic, green chillies, coriander leaves, salt into a smooth paste. Add water only if required as tomatoes are rich in water content.

Take a pan add 1tsp of oil. Add mustard seeds, cumin seeds, red chillies, curry leaves and sprinkle this tempering over the grinded chutney.

Chutney is ready and can be consumed with chapatti, rice, idli etc.

Instant Malpua (Less Ghee)



Ingredients:

Wheat Flour: 2 cups
Jaggery: 2 cups
Sooji (Upma Rava): 2 tbsp
Rice Flour: 1 tbsp
Ghee: as required
Milkmaid: as per need
Dry Fruits





Method:



Soak jaggery in water for sometime. Once jaggery dissolves in water add 2 cups of wheat flour, sooji, rice flour and prepare batter of dosa consistency.

Take a non-stick pan and spread the batter over the pan with the help of spatula slowly.

Add ghee over the mini malpuas and allow it to cook. If required, place a lid over the pan so that the malpua is well cooked.

Once the malpua is ready to serve, you can add a tsp of milkmaid over the malpua that taste similar to rabdi and sprinkle some dry fruits over the milkmaid. It tastes like Rabdi Malpua.

Broken Wheat Upma



Broken Wheat (or) Lapsi Upma is a very healthy breakfast as it is an excellent source of fiber and also low in fat. 




Ingredients:

 Lapsi Rawa / Broken wheat Rawa – 2 cups (pressure cooked in 4 cups water)
 Onions – 2 (medium-sized; finely chopped)
 Mixed vegetables (carrots, beans, peas)-1cup
Curry leaves – finely chopped
Green Chillies – 2-3
Salt – to taste
Lime juice (optional) –1 lime
Ghee- 1 tsp

Seasoning Ingredients:

Oil - 1 1/2 tbsp
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Chana dal- 1/2 tsp
Curry leaves – few

Garnish Ingredients:

Chopped coriander (dhania) - 2 tbsp
Fresh grated coconut-1/4 cup



Method:

1.      Heat oil in a pan and add mustard seeds when it splutters, add urad dal, channa dal.
2.      Then add curry leaves, once it starts to pop add the grated ginger, green chillies, onions and saute till the onions become translucent.
3.      Add the green peas, carrot, beans, broken wheat and saute for few minutes then add water, salt and mix well. Close the lid of the pan and allow it to cook till the water evaporated and you find it soft.
4.      Transfer the contents of the pan to the serving vessel and add ghee then garnish with, coriander, grated coconut and lemon juice to it and mix well.
5.      The broken wheat/lapsi vegetable upma is ready. Serve it hot with coconut chutney.

Mini Uttapams





Ingredients:

Urad Dal: 1 Cup
Rice: 2 Cups
Poha: 2 tbsp
Onions: 1
Green Chillies: 2-3
Tomatoes: 1
Salt: as per taste
Oil: frying




Method:

1.      Soak Urad Dal and Rice in water for 6-7 hours.
2.      Blend the urad dal and rice into the mixer (or) grinder with enough water. The batter should be of Dosa batter consistency. Add salt as per your need to the batter.
3.      Add finely chopped onions, green chillies, tomatoes, coriander leaves to the batter.
4.      Take a dosa pan and prepare 4-5 medium sized uttapams.
5.      Spread some oil around the uttapams and turn upside down.
6.      Remove the uttapams from the pan once they are cooked.
7.      Serve hot with coconut chutney.

Note:

·         Either you can add the chopped vegetables inside the batter (or) sprinkle the vegetables over the uttapams on the pan and allow it to cook.
·         If the uttapams don’t turn out to be soft, you can add 1tsp of Eno Fruitsalt.
