Chatpate Besan Ke Gatte



Gatte Recipe: Take 1 cup besan (gram flour or chickpea flour), mix salt, hing (asofetida), red chili powder, turmeric, cumin seeds and fennel seeds powder. Also add one teaspoon oil. Add little water and make dough of it. Make long rolls out of it . Boil it for 15 minutes in water. Cut the roll now in small round pieces.



Ingredients:

Onion: 2 small pieces
Green Capsicum : 1 piece
Tomato: 2 small pieces
Green Chili: 1 piece
Ginger: 1 piece
Olive or Vegetable Oil – 2 tablespoon
Coriander leaves
Spices: mustard seeds, asafetida, salt, red pepper, coriander powder, garam masala, kasuri methi, haldi powder.

Procedure:
  1. Cut the gatte roll in small round pieces.
  2. Take a pan and heat oil in it. Add mustard seeds and asafetida. Add chopped onion and sauté it till it turns light brown.
  3. Add chopped green capsicum and tomatoes and sauté them for 5 minutes.
  4. Now add cut green chili and ginger along with spices (as per taste). Mix all of them thoroughly.
  5. If you find it a little bit dry, add two tablespoons of fresh curd in the last and mix it.

Makki Atte ki Chatapti Roti



 Ingredients:
  • Makki ka atta (cornmeal flour) - 1cup
  • Boiled potato - 1mashed
  • Onion -1 finely chopped
  • Green chili – 1
  • Red chili – 1/4 tsp
  • Coriander leaves – finely chopped
  • Sesame seeds – 1tsp(optional)
  • Wheat rawa–1tbsp
  • ajwain or thyme seeds–1/8 tsp(optional)
  • Salt to taste
  • Oil for frying

    Method:
  1. Take a bowl and mix all the ingredients, add one tsp oil to into it.
  2. Mix well it so that it becomes a slightly dough and a little scattered.
  3. Take 2 tbsp dough and bind it as we do for a laddoo.
  4. Flatten this ball on palms like vada.
  5. Deep/ shallow fry
Enjoy hot makki ka vada with sauce or  green chutney in winter  with cup of tea!

Hara Bhara Kabab



Ingredients:

Spinach: 250g
Potatoes: 3 medium size
Beans: 1/2 cup
Bell peppers: 1/2 cup
Green chilli and ginger paste: 1 tbsp
Soaked Poha: 1/2 cup
Peas: 1 cup
Corn flour: 2 tbsp or as needed (for binding)
Salt to taste
Chilli flakes: 1 tsp
Lime juice: 1 tsp

 

Method:

1) Mix all the ingredients nicely. Make flatten rounded kababs or any other shape which you like. Press kaju in the center of each kabab.

2) Deep fry on medium heat till you get golden color.

3) Serve hot with green chutney. Happy cooking guys.

Custard Powder Halwa




Ingredients:

Custard Powder: 1 cup
Sugar: 3 cups
Water: 4 cups
Ghee: 5 tsp
Cashew nuts: 10




 


Method:

1. Chop the cashew nuts finely and keep aside. No need to roast them. Keep a plate ready by greasing it with ghee.

2. In a thick bottomed pan, mix together custard powder, water, sugar and mix well without any lumps.

3. Keep the pan on the stove and begin by cooking over high flame.

4. The mixture will begin to boil and start to thicken. Keep stirring.

5. Add ghee, cashew nuts, mix well and reduce the flame. By now the mixture will look like a thick jelly.

6. Keep stirring continuously for 8-10 mins till the mixture begins to form into a lump and begins pulling away from the sides.

7. Transfer the halwa to greased plate and level the top. You can sprinkle some nuts.

8. Once it cools slice them and serve.
