Khichu




Khichu is a gujarati and rajasthani cuisine made from either rice flour, wheat flour (or) bajra flour. It should be consumed hot as it tastes much better. Khichu tastes delicious with achar methi masala and oil. Must try Rice flour khichu during winter.

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes



Ingredients:
  1. 5 cups water
  2. 2 cups Rice flour
  3. Salt to taste
  4. ¼ tsp Baking Soda
  5. 2 green chillies (fine chopped)
  6. 1 tsp Cumin seeds
  7. Achar Methi masala according to taste
  8. 1 tbsp oil
  9. 1 tsp Ajwain
  10. 1 tsp chilli powder
Method:

Boil water in a container add cumin seeds, green chillies, baking soda and salt to the boiling water directly.
Let the water boil for 10-15 minutes at medium to slow flame.

Mix rice flour slowly to the boling water and stir continuously using wooden spoon to prevent any lumps.

Cover the container with a lid and allow the Khichu to cook for 15-20 mins.

Serve in a dish and sprinkle some chilli powder, ajwain on top of Khichu. Finally add oil to it.

Serve this hot Khichu with mango pickle.
